Ingredients

  • 2 1/2 cups old-fashioned rolled oats

  • 1/2 cup honey

  • 1/3 C coconut oil (or butter)

  • 1/4 cup brown sugar

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1/2 cup mini chocolate chips

Preparation

  1. Preheat your oven to 350°F.

  2. Line an 8x8 inch baking pan with parchment paper, leave the overhang on the sides for easy removal.

  3. In a large mixing bowl, combine the oats and chocolate chips. Set aside.

  4. In a saucepan over medium heat, combine the honey, coconut oil, brown sugar, vanilla extract, and salt.

  5. Stir and cook until the mixture is smooth and the sugar has completely dissolved.

  6. Pour the honey mixture over the oats and chocolate chips. Stir until well combined.

  7. Transfer the mixture to the prepared baking pan and press down firmly & evenly.

  8. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.

  9. Cool Granola Bars completely in the pan.

  10. Once cooled, lift the bars out of the pan and place them on a cutting board.

  11. Cut into bars of your desired size.
